Pairing

Fish: it goes best with white fish in any form of preparation, grilled, baked, roasted or grilled. It also goes very well with sauced fish.

Seafood: raw, cooked or grilled. I would highlight the pairing with lobster or grilled razor clams.

Meat: if it is red meat, it should be lightly spiced and seasoned. In the case of white meats such as chicken and turkey, we suggest that they are stews.

Cheeses: soft and fruity cheeses such as Cheddar or Comté, and also soft cheeses such as Munster or Camembert.

Rice dishes: broth, seafood and mushroom dishes.

Salads: especially if they have contrasts between sweet and savoury flavours, for example, salads with pear and gorgonzola cheese or grapefruit and mushrooms.

ANGELITA

Pairing

Fish and seafood: ideal for dishes with oysters, lobster, cuttlefish or squid. On the other hand, it does not go well with anchovies, tuna or blue fish. It goes very well with smoked fish, especially if they are aged, and some rock fish such as grouper.

Meat: in general, Chardonnay wine goes well with low-fat meat dishes such as chicken or rabbit, game birds such as pheasant and quail, and some pork dishes. It does not go well with lamb or pigeon.

Cheese: perfect with cheeses such as gruyer, edamo brie, but does not go well with strong cheeses such as roquefort or manchego.

Pasta: ideal for pasta with light sauces such as carbonara.

Spices: particularly suitable for dishes seasoned with white pepper, nutmeg, saffron and ginger. It does not harmonise well with dishes containing thyme, coriander or cinnamon. Also a great companion for spicy Southeast Asian dishes.
